This course will address the science, ethics and politics of the American food system and our own individual food choices. We will start with a session on, “What kind of problem is the problem of obesity?” Everyone seems to think obesity is a problem. But is it a public health problem, an economic problem, a moral problem, all of these or something else? Participants will keep a food diary for discussion in class as we explore different diets (standard American, Mediterranean, Paleo, vegetarian, vegan). The course will wrap up with thoughts on “neurogastronomy" — how the brain creates taste and how our tastes are manipulated by the food industry — and on the future of food locally and globally.
